About wheat flour Dough :-
Wheat flour is also known as whole wheat flour and gehu ka atta Making the dough is very easy. The dough is a mixture of wheat and water. All you need just wheat flour salt oil and water further knead the dough with your hands and keep dough aside for 20-25 . This is so important step else dough will be hard and it may tough to roll hence make sure to keep dough aside for 20-25 minutes so that dough will be soft.
Potato stuffing :-
Potato stuffing is the most important step. In order to make potato stuffing, you need boiled potatoes peel and mashed them in a bowl. Add the spices given below. It completely depends on one’s choice some people love to add onion in the stuffing which called Aloo Pyaz (Onion Paratha).

- Green chilly finely chopped
- Garam masala
- Amchur powder

Boiled Potatoes
Atta ( Wheat Flour )
Red chilly powder
Coriander powder
Fresh Coriander

Directions
- To make aloo ka paratha you need to boil potatoes in a cooker on a medium flame cook the potato in the water and wait for 3_4 whistle when the pressure settles down remove the lid, drain the water and allow them to warm.
- Peel and mash the potatoes with a grater or a potato masher .Potatoes should be mashed perfectly no unmeshed potatoes should be there in stuffing .Further in a bowl add grated boiled potatoes ,red chilly, powder coriander , garam masala powder, green chilly finely chopped ,amchur powder fresh coriander leaves finely chopped and salt to taste mix them well.
- Pinch a medium ball of dough and roll it between your palms and place the potatoes stuffing in the center .After that take the edge and start pleating press the join portion slightly .
- Dust some flour and start rolling aloo paratha .Roll the paratha about 7-8 inches diameter or the size of roti or chapati .
- Place the aloo paratha on a hot tawa . Make sure tawa should not be too hot or too low cooking paratha at a low flame will make paratha hard. Further press the edges with a spatula .Cook paratha on low flame when the base is partly cooked flip the paratha spread some ghee or oil .Well made paratha will be puffed up .
- Serve your hot aloo ka paratha recipe with butter and pickle or with fresh curd. A cup of tea makes this recipe a perfect breakfast.
Notes
- Potato should be mashed well and there should not be any lumps or small pieces in it so that your paratha will be in shape break while rolling.
- Finely chop herbs like green chilies and coriander.
- You can also add finely chopped onion
- knead a soft dough and use some ghee or oil in dough.
- Add salt in stuffing in last else stuffing will be watery.
