Aloo ki sabzi is very different and piquant in taste. It’s a very easy recipe which can take hardly 30 minutes to your kitchen time. You can easily make it at home. This Indian potato and tomato-based curry is mostly prepared for Bhandaras and pooja at home. We serve it after the pooja an open meal system called Bhandara The taste will be boost if you add Bedmi puri along with Aloo ki sabzi. You can add it in breakfast meals and enjoy more recipes.

About Aloo Ki Sabzi
The best is that you can enjoy it with Bedmi puri or kachori. Kids and adults everyone love to have this delicious aloo ki sabzi. While adding potatoes it’s smashed using hands into small pieces and dropped into the masala. It’s a tomato-based curry I used tomato puree in this recipe. We prepare it for pooja and Bhandaras so we will not add onion and garlic in this recipe. Even without onion and garlic, It tastes so great. I used common spices in this recipe. We will use spices powder like Dhaniya powder, Red chili powder, Amchur powder, Turmeric powder, Gram masala powder.
About Bedmi Puri
Bedmi puri is a traditional puri and standard breakfast eaten with aloo ki sabzi. In order to make these puris, I soaked urad dal and then ground it into a smooth paste mixed with wheat flour and spices. Urad dal gives a crispness in this puri. You can also use mung daal instead of urad dal. Bedmi puri is a great breakfast option. I knead daal and masalas in the wheat flour you can make the stuffing and stuff them in a small portion of your dough of flour.

Ingredients
- Ingredients – Bedmi Puri
2 Cup Wheat Flour
1 Cup Urad Dal Paste with 2 Green Chilies (soaked dal for 2 hours)
Salt To Taste
2 Cup Rava
½ Tbsp Dhaniya Powder
½ Tbsp Red Chili Powder
Jeera Powder
½ Tbsp Saunf Crushed
½ Tbsp Garam Masala
½ Tbsp Asafetida
½ Tbsp Adrak( grated)
2-3 Tbsp Oil
- Ingredients – Aloo Sabzi
1 Bowl Tomato Puree
Oil
4 Potato (Boiled and Peeled)
½ Tbsp Turmeric Powder
½ Tbsp Red Chili Powder
1 Tbsp Amchur Powder
3-4 Laung(Clove)
2-3 Kali Mirch
½ Tbsp Garam Masala
½ Tbsp Jeera
½ Tbsp Dhaniya Powder
½ Tbsp Sabzi Masala
Salt To Taste
Directions
- Bedmi Puri
- Soak Urad daal in enough water for 2-3 hours
- Drain the water and grind urad daal with green chillies make a paste.
- 3- In a bowl add wheat flour, Oil, urad daal paste, Rava, Dhaniya powder, red chilli powder, jeera powder, saunf crushed, gram masala, asafetida, adrak and salt.
- Add little water and knead a tight dough cover and keep aside for 10-15 minutes.
- Make a small ball from the dough.
- Roll the balls using little oil and make a 3-4 inch circle.
- Heat the oil in a pan, when the oil is hot deep fry the poories till they become golden brown from both sides.
- Aloo Sabzi
- Add Tomato, Clove, Black Pepper, Cardamom in a blender.
- Blend to make a smooth puree.
- Heat oil in a kadhai .once heated then add jeera let them crackle.
- Tomato puree cook for 5-6 minutes on low flame.
- Add turmeric, jeera powder, dhania powder, red chili powder, amchur powder, gram masala, sabzi masala, and salt to taste Cook until oil gets separate from sides.
- Add half a cup of water.
- Add kasuri methi.
- Break the boiled potato and add in the masala.
- Add 2 cups of water cover it and cook for 5-10 minutes on medium flame.
- Take out the sabzi in a bowl with hot pooris and garnish it

Notes
- Gram masala is the main ingredient here it would be good if you use homemade fresh gram masala.
- Don’t add too much water in Curry ( Sabzi ).
